There will only ever be 21 million Bitcoin. Not 21 million and one. Not 'we'll print more if we need it.' Exactly 21,000,000. This is hardcoded into Bitcoin's protocol — as unchangeable as the recipe for a perfect BLT. No central bank can decide to 'stimulate the economy' by adding extra slices. Every 4 years, the rate of new Bitcoin created gets cut in half (the halving). By around 2140, the last satoshi will be mined. Until then, the sandwich just keeps getting more scarce.
